Edible flower salad

I’ve discovered this farmer (and his produce) through a friend of my aunt’s. He apparently gave-up a lucrative job in finance to take-up his dream, farming. It is set-up like a CSA, with a basket of fresh picks delivered to one’s door every week. What thrilled me was that he always includes wild herbs and greens (which are so plentiful this time of year) as well as edible flowers.
How can one resist pansies and violets? Delightful, almost moving with their tender, ethereal and silky petals. I had to have some this week!
INGREDIENTS:
- 3 cups of salad greens
- 1 cup of fresh fava beans, raw or green peas
- 1 cup of edible flowers such as pansies and violets
- Dressing: 1/2 cup Seville orange juice or regular orange juice (plus one tablespoon of lemon juice or lime juice)
- 1/3 cup of olive oil
- salt, to taste
1. Combine all the ingredients gently. Mix the dressing ingredients and toss a bit. Serve.

@Moni: I have a supplier who owns a farm in Batroun, his name is D’Amour et d’eau fraiche,Nicolas Assaf. Theey do delivery as well.

@Pumpkin Hello, I used to get them from a gentleman who would deliver but unfortunately he went out of business. I would suggest going to nurseries and asking for a referral.
