Eggs in spinach

A delightful Iraqi dish of eggs baked in spinach; I added a few diced bell peppers for color. I have made it with both frozen chopped spinach and whole-leaf fresh and the fresh spinach is way superior in taste and appearance.
INGREDIENTS:
1 bunch spinach, or a bag of washed spinach or baby spinach
4 large eggs
salt, pepper, dash of nutmeg
4 Tbsp oil or clarified butter
1 cup of diced red, yellow and orange bell pepper
1 cup ground meat or sausage
1 onion, chopped
1. Heat the oil or butter and fry the onion, diced peppers till softened; add the meat and brown, sprinkle with the spices. Add the spinach to the skillet and cover for a couple of minutes until the spinach wilts a bit.
2. Make a crater in different spots and place an egg in each crater; bake in a preheated 350F oven for 8 minutes or until the eggs are set. Serve with bread immediately.

Superbe recette ! Je fais souvent des oeufs aux épinards à l’irakienne mais sans viande et sans poivrons. Cette version me plaît beaucoup, je l’essaierai un de ces prochains jours !

Excellent plat ! Très représentatif, à mon avis, de l’esprit “Bonheur de vivre” Moyen Oriental…
Comme Darya ( mais en Jordanie), on prépare ce plat exclusivement avec des œufs est des épinards.
Seul bémol, la cuisson des œufs au four.
Je trouve ce mode de cuisson incompatible avec un “résultat parfait” voulant que le blanc d’œuf ait un aspect légèrement caramélisé (Voir très caramélisé…!!!) avec, en même temps, un jaune d’œuf restant mou, onctueux, coulant et légèrement (à moitié) transparent.
Dans mon expérience, les jaunes d’œufs sortaient du four…carbonisés….
Mais à l’époque, je trouvais ça très bon !
