Meringue with berries (quick and easy)

Valentine dessert

I only had 15 minutes to make “something” for Valentine, in order to entertain my 6 and 8-year old nephew and niece. This is a non-pretentious, no measuring required, easy peasy, even “healthy” dessert. Their mom who watches their diet like a hawk ( their school forbids chocolate or candies to be brought to school) would not mind, I don’t think.

INGREDIENTS:


2 or 3 egg whites, at room temperature (set in a mixing bowl)

1 cup powdered sugar

1 teaspoon vanilla or rose water

2 cups berries, assorted

1/2 cup raspberry jam, heated and strained if possible

whipped cream (I used a can)

1. Whip the egg whites and gradually add the sugar and vanilla, till the whites are glossy and stiff. Add a couple of drops of food color if you like, towards the end. Transfer to a bag and pipe onto a piece of baking paper in the shape of a heart, filling the inside with more meringue. Bake in a preheated 250F for about 30 minutes, until crackly and dry. Set aside.

2. Mix the strained jelly with the berries and set on the meringue. Pipe the cream all around. Serve.
