S’Mores cookies

The sight of freshly puffed marshmallows on chocolate cream, served on a plain cookie elicits delight on a universal scale.
Then, why not serve s’mores on a holiday table, for a dessert made in a jiffy? You can whip these in under 5 minutes flat and make adults and children happy, without having to organize a camping trip. Both my kids did the boy-scout and girl-scout thing and I don’t hear them reminiscing about roughing it again.
INGREDIENTS: 6 servings
6 or 12 plain cookies, like Marie or any other type
1 heaping teaspoon per cookie of Nutella or other chocolate spread
6 mini-marshmallows per cookie
Optional: a drizzle of grape molasses (adds some tanginess)
1. Slather the chocolate spread on the cookie evenly. Place mini-marshmallows all around. Set the oven to broil (low) and place the cookies on a baking sheet. Broil for a few seconds, watching them constantly. Serve immediately.

I’ve been doing the same for years, except I use McVitie’s digestive biscuits and a square of chocolate. I pop it in the microwave first, to allow it to melt, then I place marshmallows on top of a semi-melted chocolate pool. Delicious!
