Yogurt and cucumber salad
March 6, 2009 • Category: Salads
INGREDIENTS:
1 large jar of plain yoghurt
several cucumbers, 1 teaspoon of dried mint, crumbled to a powder
2 or 3 cloves of garlic, mashed up with a tad of salt or 1 teaspoon of toom (see post)
METHOD:
Pour the yogurt in a bowl. Beat it a few seconds with a fork. Add the garlic and the mint and the cut up cucumbers and mix it all up. Decorate with a fresh mint leaf if you wish. Enjoy with any meal or on its own with bread or crackers.
NOTE:
I have used celery instead of the traditional cucumbers and I like it a lot with it too! Celery keeps its crunch longer than the cucumbers.

This was a great side dish – I enjoyed having it with the spicy eggplant dish. So simple and so tasty 🙂
