Zaatar and cheese plate

I posted an image of my foray into zaatar hunting and both Arlette and Dana mentioned the zaatar and feta cheese combo. Feta (aka Bulgarian cheese here) is crumbled, doused in olive oil and sprinkled with fresh zaatar; a breakfast and after-school snack that helped assuage my hunger daily as a child growing up in Beirut.
Obviously, not all of us can go out and pluck a handful of wild zaatar; getting a good-quality dry mix is fine as a substitute or a little oregano. Last but not least, the best olive oil and all the trimmings: Pita bread, chopped tomatoes, olives and sliced cucumbers should be included in the mouthful.
The most satisfying breakfast or snack.

I love these types of small meals-Olives,cheese and olive oil is near perfect.
I was reading recently about a best food experience. It took place in the Middle East under a canopy of lemon trees-the small dishes served up were very similar to this one.

The quality of ingredients really makes a difference and when they’re at their peak of perfection simple things can become a banquet like this. I love Bulgarian feta. When I was there it was always called “white cheese”.

Just perfect, and I agree, the ideal breakfast: filling, nutritious, authentic. I’d love to go foraging for za’atar one day.. it grows all around my family’s home on the Mount of Olives in Jerusalem.
